Though we usually go to church on Sundays, today was a day to get more preparation done for the first day of classes tomorrow. We had a quiet time together reading the Bible and praying, and then enjoyed our "homemade" instant oatmeal with dried fruit, boiled water, and UHT milk, plus coffee made with a filter cone, and then had some juice. We worked diligently together on the Oral English course and how to co-teach it. After lunch of cup-of-soup and local crackers in our hotel room, we met up with our friend L on the school campus to work out modifications to our courses based on resources or technology they have or do NOT have. For example, Rod normally uses lots of printed handouts for his classes but here, our friend L has to print everything out for us herself. Rod is also accustomed to using Blackboard to upload assignments, post grades but here we need to use QQ, a Chinese chat program to share files with students. So, we are learning to be flexible.

Finally, L walked us further into the campus to some of their little food stalls to check on dinner possibilities to "take away" to our hotel room. She introduced us to one she likes, "cold pot". It is not really cold. An array of trays of different tofu, different mushrooms, cauliflower, broccoli, wood ear fungus, and many different (and different looking) meats were set out to choose from. We decided to stay vegetarian and got one large plate full of things. The young "chef" did a quick boil of the veggies (after weighing them raw to determine the price), and also served up 2 bowls of steamed rice. All this was packed up plus 2 cartons of Chinese ice tea. The veggies were seasoned with "mildly hot" spices/sauce. We felt very happy carrying off our local food--venturing deeper into the culture. When we got back to the apartment, we enjoyed a very delicious dinner! I think we will be enjoying "cold pot" again soon. The campus also has a sort of Cantonese food stall and a Chinese dumpling stall which we would like to try.
